One Of Our Favorite Panzanella Recipes From Tasty Thursday.
Fresh Heirloom Tomato and Feta Panzanella
The Ingredients:
1. Mixed Varieties Organic Heirloom Tomatoes
2. Organic Red Onion
3. Crumbled Feta Cheese
4. Kalamata Olives
5. Italian Parsley
6. Olive Oil
7. Balsamic Vinegar
8. Day Old Crusty Bread or Croustini
9. Salt and Pepper
The Recipe:
1. Slice up 5-7 organic heirloom tomatoes into bite sized chunks.
2. Slice a small handful of pit-removed kalamata olives into halves or thirds.
3. Mince a handful of rinsed Italian parsley and half of a small organic red onion.
4. If you are using day old bread, it will need to be broken into bite sized chunks, drizzled with olive oil, and toasted on a cookie sheet in the oven.
5. Combine the tomatoes, onion, olives, parsley, and a generous amount of crumbled feta cheese in a large bowl and splash the mixture with your favorite olive oil and balsamic vinegar to taste. Toss and let sit for a few minutes for the flavors to mix.
6. Salt and fresh ground black pepper to taste.
7. Grab a bowl and spoon the tomato salad onto a handful of toasted bread or broken croustini.
8. Enjoy!
